NotesThe French National Institute for Sciences and Arts offered a large prize for work elucidating the difference between organic substances that cause fermentation and organic substances that are fermented. It was never awarded, but the offer illustrates both the importance and the mystery of fermentation at the beginning of the century. Later, in the 1840s and 1850s, research on fermentation was to provide important underpinning to the germ theory of diseases.
